Vegetables with Lentil Bolognese Recipe

 

Ingredients

  • 1 small cauliflower broken into florets

  • 225g/8 oz broccoli florets

  • 2 leeks, thickly sliced

  • 225g/8 oz Brussels sprouts, halved if large

For the lentil Bolognese sauce

  • 1 onion, chopped

  • 2 garlic cloves, crushed

  • 2 carrots, coarsely grated

  • 2 celery sticks, chopped

  • 45ml/3 tbsp olive oil

  • 115g/4 oz red lentils

  • 400g/14 oz can chopped tomatoes

  • 30ml.2 tbsp tomato puree

  • 450ml/3/4 pint stock

  • 15ml/1 tbsp fresh marjoram. chopped. or 5ml/1 tsp dried marjoram

  • salt and ground black pepper

Serves 6


Method:

  1. In a large saucepan, gently fry the onion, garlic, carrots and celery in the oil for about5 minutes, until they are soft.

  2. Add the lentils, tomatoes, tomato puree, stock, marjoram and seasoning. Bring the mixture to the boil, then partially cover with a lid and simmer for 20 minutes until thick and soft.

  3. Place all the vegetables in a steamer over a pan of boiling water and cook for 8-10 minutes until just tender.

  4. Drain and place in a shallow serving dish. Spoon the sauce on top, stirring slightly to mix. Serve hot.
